These terms describe different things. “Cervical” usually refers to a supportive neck-focused shape; “memory foam” refers to material. A pillow can be both.

A contoured cervical pillow might be made from molded memory foam, latex or another foam. A memory-foam pillow might be contoured or simply rectangular.

Which matters more?

For fit, height and shape usually matter before the marketing label. Material then changes firmness, response and heat feel.
